OAT AND ALMOND PANCAKES
Ingredients:
- 3 egg whites
- ½ cup of oatmeal, preferably powdered (flakes will also work)
- 2 tablespoons of almond flour
- Sweetener or honey to taste
- 2 teaspoons of white yogurt (cold) of your choice
Preparation:
- Make sure you have all the ingredients you are going to use close to you in the kitchen.
- Sift the almond flour as much as possible using a very clean metal strainer, and have it ready in a bowl for later use.
- If you use oatmeal, you should also sift it and add it to the same bowl with the almond flour. If you use rolled oats, just add them to the bowl.
- Use a household mixer to mix all the ingredients.
- First, beat the egg whites in the blender for about 30 seconds and gradually add the rest of the ingredients. Start with the sweet element, whether it be honey or sweetener, continue with the cold yogurt, and if you want to add nutmeg, cinnamon or vanilla extract to taste, this will be the time to do so.
- Finally, gradually add the previously sifted almond and oat flour.
- When you notice a homogeneous and well-incorporated mixture, stop the blender and let it rest for 5 minutes.
- Take a few minutes to heat up a Teflon pan on the stove. You can spread a napkin with some margarine or oil on top if you wish, but the idea is that the Teflon will help the mixture not stick.
- Using a ladle, pour the mixture into the pan over low heat, turning it over as it cooks with a spatula.
